Crowned the ‘Prince of Cheese’, Beaufort’s fame is international. An unpasteurised cows milk cheese produced with milk from the Abondance or Tarine breed of cows. The cows must be fed on pastures or hay that grows within AOC boundaries. It is matured for a minimum of 5 months. The concave sides have two uses, to prevent the fresh cheese from sagging, and during the transport from mountain slopes to the valley they prevented the heavy wheel from slipping off the mule’s back. There are two classes of Beaufort: Summer Beaufort made from June to October and ‘Alpine Chalet’ Beaufort made in the high mountain pastures over 4000 feet with the milk from one herd.
